CAN’T WAIT TO TRY THESE. I need to find out where I can buy carob chips, because I’ve been wanting to use them forever. Hm.

Easy Healthy Chocolate Chip Cookies by Lean Body Lifestyle

  • 1 cup whole wheat pastry flour
  • 1 pinch of salt & baking powder
  • 2 tbsp. unsweetened apple sauce
  • 1 egg white
  • Vanilla extract
  • 3/4 cup stevia
  • 1/4 cup unsweetened carob chips
Directions:
  1. Preheat oven to 350 degrees.
  2. Mix dry and wet ingredients in separate bowl (not including chips)
  3. Pour wet ingredients in with dry and mix. Use water to help if necessary.
  4. Mix in carob chips.
  5. Separate dough into about 9 cookies and place on a cookie sheet sprayed with non-stick spray or parchment paper.
  6. Bake for about 8 minutes.

Nutrition Facts per cookie:

68 calories
1g fat
2g protein
12g carbs

1 Minute “Clean” Berrylicious Microwave Minute Muffin
1/4 cup quick oats
1 egg
small handful of organic blueberries
little bit of brown sugar/stevia (optional)
tbsp soymilk (for added moistness!)
Mix it all up into a coffee mug!
Put it in the microwave for 1 minute, make sure it doesn’t overflow!  Add an extra 30 sec if it needs to firm up.

1 heaping tablespoon very-ripe banana (20g)
scant 1T oil, pre-melted vegan butter, applesauce, or combo (I used 10g coconut oil)
1T liquid, or more or less as needed to moisten batter (nondairy milk or water)
1/4 tsp vanilla extract
1/4 tsp baking powder, and tiny pinch baking soda (for flavor)
Sweetener (For normal tastebuds, 1 to 1 and 1/2 T sugar. If you use liquid sweetener, cut back on other liquid. You can also use stevia. I omitted sugar, but most will probably want some.)
Preheat the oven to 325 degrees. Mix the dry, mix the wet, then add the two together. Pour into an oiled (or sprayed) muffin pan. Smooth top of batter. Cook for 10-14 ish minutes. (Or you can microwave it.)
